1. Preheat oven to 325°F (160°C). Line a baking sheet with parchment paper. 2. Mix the seeds: In a large bowl, combine pumpkin seeds, sunflower seeds, sesame seeds, black sesame seeds, and chia seeds. 3. Add seasoning: Stir in garlic powder, onion powder, smoked paprika, and salt. 4. Add liquid: Pour in the water and olive oil. Stir well and let sit for 10–15 minutes. The chia seeds will gel and help bind the mixture. 5. Spread the mixture: Spread the mixture onto the prepared baking sheet. Use a spatula or the back of a spoon to spread it as evenly and thinly as possible—about 1/8 inch thick. You can lay another piece of parchment on top to help flatten it evenly. 6. Score the crackers: Use a knife or pizza cutter to lightly score the mixture into squares or rectangles (optional, makes them easier to break apart later). 7. Bake: Bake for 30 minutes. Then remove from the oven, carefully flip the whole sheet (if you can), and bake for another 25–30 minutes until golden and crisp. 8. Cool and break: Let cool completely before breaking into crackers along the scored lines or into rustic pieces. 9. Store: Store in an airtight container for up to a week.
