Instructions

Step 1
Soak chickpeas overnight. Cook in instantpot.
Step 2
Grate carrots with food processor and put aside. Pulse chickpeas in same food processor. In a large bowl, add the chickpeas, vegetables, bread crumbs, and mix well. Then add the oil, vegetable broth, and salt, and mix one last time.
Step 3
Transfer all ingredients to a 9 x 13-inch casserole dish. Press the mixture firmly into the casserole. Bake for 40 minutes.
