Instructions

Refried Black Beans:

Step 1
Heat avocado oil in a saucepan over medium heat. Add green onions, garlic, and a pinch of salt. Cook until garlic starts to sizzle, stirring for about 1 minute.

Add cumin, black pepper, and ancho chili powder. Stir for another 30 seconds.
Step 3
Add water, drained black beans, remaining salt, oregano, cayenne pepper, and lime juice. Stir together and simmer for about 5 minutes.

Mash the beans with a potato masher until smooth. Simmer for an additional 5 minutes to thicken. Adjust seasoning as needed.

Pizza “Tlayuda” Base:

Heat avocado oil in a skillet over medium heat. Toast each whole-grain tortilla until golden brown and crispy, about 2–3 minutes per side.

Assembly

Preheat oven to 230°C (450°F).

Spread each toasted tortilla with refried black beans.

Sprinkle shredded chicken breast evenly across the tortillas.

Add grated cheese on top of the chicken layer.

Top with Brussels sprouts leaves and green onions.

Drizzle lightly with olive oil and season with a pinch of salt.

Baking

Bake in the preheated oven until the tortillas are crispy, cheese is melted, and Brussels sprouts are charred at the edges—approximately 10 minutes.

Transfer to a cooling rack and let rest for 5 minutes.

Final Toppings:

Garnish each pizza with radishes, low-sugar red chili sauce or salsa, cilantro leaves, and optional shredded cabbage or pickled vegetables.
