Cream of Tomato Soup

Although you can make this with fresh, ripe tomatoes, I often use Costco's canned, peeled, organic tomatoes, and it's easy and delicious. Served alongside a grilled cheese sandwich, it's a wonderful lunch. 😋

Cover and simmer for 20-30 minutes until the tomatoes have melted and have produced their juice.

Place everything in a blender and add the milk. Mix on high until it's completely pureed. If you prefer your soup thinner, feel free to add a little extra milk or cream.
