Instructions
Step 1
Preheat oven 400* F

Squash is peeled, seeded, and cut/diced into large chunks.
(For an easier time, microwave both for 3 mins first)
Step 3
Toss with olive oil, nutmeg, cinnamon, and salt
Step 4
Bake for 30 min or until charred and soft.
Step 5
Melt butter in Lg pot.
Step 6
Slowly add heavy cream while stirring.
Step 7
Add sage leaves
Step 8
Cook sauce until hot
Step 9
Add shallots and apple cider vinegar
Step 10
Cook sauce down until thickish.
Step 11
Cook gnocchi when squash is done
(Add some olive oil, rubbed sage seasoning, basil, and thyme to water for added flavor.)
Step 12
Dish gnocchi, squash, and sauce as desired.
(Top with fresh grated Parmesan)
