Instructions

Step 1
Preheat oven to 400°F
Step 2
Combine potatoes and butter in large sheet pan. Add salt and pepper to taste.
Step 3
Place the pan in the oven and bake for 30 minutes, turning the potatoes halfway through.
Step 4
When the potatoes are tender, add the shiitake mushrooms and garlic, then cook for another five minutes.
Step 5
Remove the pan from the oven and stir in the parsley. Serve immediately.
