Baked Plaice with Brown Butter Sauce

Step 1
Season the plaice with salt and leave in the fridge for a couple of hours before cooking
Step 2
Preheat the oven to 220c. Dust the plaice in flour and put it in a baking tray. Melt half the butter and brush over the fish.
Step 3
Bake the fish for 15-20 minutes depending on size. The fish should just lift away from the bone.
Step 4
Lift the plaice to a serving dish and put the tray on the hob on a high heat. Add the wine and reduce by 2/3.
Step 5
Add the remaining ingredients apart from the butter and cook for a few minutes.
Step 6
Add the remaining butter and stir vigorously to emulsify. Check seasoning. Pour over the fish and serve.
