Instructions
Step 1

Preheat oven to 350F (180C). In a large bowl, sift together the bread flour, all-purpose flour, salt, and baking soda.
Step 2

Place the butter in a saucepan and bring it to a boil. After a few minutes, the milk solids will begin to toast and turn brown. Stir continuously to ensure it browns evenly. Once it reaches a dark brown color, transfer it to a measuring cup and add enough water to make a total of 1 cup. Set aside to cool it.
Step 3

In a mixing bowl, combine the white sugar, brown sugar, vanilla extract, espresso powder, and browned butter. Mix well. Add the egg and egg yolk, stirring until fully incorporated. Finally, add the flour mixture and mix until combined.
Step 4

Fold in the chocolate chips, mixing thoroughly to evenly distribute them.
Step 5

Using a 1 1/2in ice cream scoop or a tablespoon, drop dough onto baking sheets lined with parchment paper, spacing 2 inches apart. For best flavor, chill for 1 hour, or even better chill overnight!
Step 6

Bake cookies on 350F (180C), for 12 to 14 minutes. Let cool on sheets on wire racks 5 minutes.
