Mediterranean Pork with Roasted Vegetables

Instructions

Step 1
Preheat oven to 200°C (400°F).
Step 2
In a medium bowl, toss the pork with 2 tablespoons of olive oil, oregano, thyme, minced garlic, salt, and pepper. Squeeze the lemon juice over the pork and toss to combine.
Step 3
In a large bowl, toss the red onion, bell peppers, halved cherry tomatoes, and tender stem broccoli with 2 tablespoons of olive oil, oregano, salt, and pepper.
Step 4
Spread the vegetables in a single layer on a large baking sheet. Arrange the seasoned pork pieces amongst the vegetables, ensuring some space between them. You may need two baking sheets.
Step 5
Roast for 30-35 minutes, or until the pork is cooked through (internal temperature of 71°C or 160°F) and the vegetables are tender and slightly caramelized. Keep an eye on the broccoli as it cooks faster. Flip the pork halfway through and stir the vegetables occasionally.
Step 6
Once cooked, remove from the oven and let the pork rest for a few minutes.
Step 7
Serve immediately, garnished with crumbled feta cheese and fresh parsley. Offer lemon wedges on the side.
