Instructions

Step 1
Measure and prep all ingredients for Rachel’s green salad.
Step 2
Step 2 Prepare the zesty Italian dressing for the salad. In a bowl or a large measuring cup, whisk together the red wine vinegar, Parmesan cheese, honey, dried basil, parsley, oregano, Worcestershire sauce, garlic powder, salt and pepper.
Step 3
Step 3 Slowly whisk in the extra virgin olive oil to create an emulsion. Set the dressing aside.
Step 4
Step 4 Cook the crispy turkey or pork bacon. In a skillet, cook the bacon over medium-low heat until very crisp. Let the bacon cool and chop it into small pieces.

Step 5 Cook the chicken breasts. Season the chicken breasts with garlic powder, salt and pepper.

Step 6 In a skillet over medium heat, heat avocado (or olive) oil. Add the chicken and cook on each side for about 5-7 minutes until cooked through and the internal temperature reaches 165°F.

Step 7 Let the chicken rest for 5-10 minutes before dicing the chicken into cubes.
Step 8
Step 8 Assemble Rachel’s green salad. In a large salad bowl, add the chopped iceberg lettuce. Add the chopped Roma tomatoes, chickpeas, chopped salami, diced chicken and top with the crispy turkey (or pork) bacon. Top with a generous grating of Pecorino cheese.
