Instructions
2 Days Prior
Step 1
Feed Sourdough starter twice. Once in the morning, once in the evening 1:1:1 ratio
Next Day
Step 2
Add water to Sourdough starter and mix. Then add flour and salt and mix by hand
Step 3
Stretch and fold every 30 minutes for 2 hours (5 times total)
Step 4
Bulk ferment on the counter until volume increases by 50% (8-10 hours)
Step 5
For bread in butan and place in refrigerator for up to 48 hours
Bake
Step 6
Preheat oven to 450
Step 7
Cut "X" in top of Sourdough and place in a Dutch oven. Cover and bake for 25 minutes
Step 8
Uncover and reduce heat to 425. Bake 10-12 minutes
