Instapot lentils and beef stew

Rich and hearty beef stew that is easy to make and very filling. Can be served as is or with a side of jasmine rice.

Step 1
In a bowl, add your lentils and soak in water for about 2-3 hours

Step 2
While the lentils are soaking, take you beef and cut in bite-sized chunks, taking into consideration that when cooked, the meat gets a little bit smaller. Then, put the meat in a bowl and season it with salt and set aside. The amount depends on if you are using broth for your stew or water.




Step 3
Turn your pressure cooker one and set it on Saute mode. While that heats up, chop up the bell pepper and mince up the cloves. Add your oil to the pressure cooker and add the bell pepper and garlic. Saute them for 5 mins.





Step 4
When the garlic is fragrant, add the beef and saute until every piece of meat is slightly cooked. Then, add the seasoning to taste and saute until everything is combined


Step 5
Add your Broth or water and set to pressure cook on "Normal" for 35 mins, and turn off the "keep warm" button. Put the lid on and let it come to pressure. Once the time is finished, open the vent to let the pressure out or let it cool down for an hour or more. After the pressure is gone completely, you can open the cooker. Stir your stew and taste to see if salt needs adjusting.


Step 6
You can serve it as is with a little but of spinach or with a side of jasmine/white rice. I add a little bit of crushed peppers on top of mine and mix it.
