Instructions
Step 1
In lg saucepan, melt 2 Tbsp butter over med heat. Add onion, garlic, ginger, and Serrano and cook, stirring frequently with a wooden spoon, until onion begins to brown, 5-7 min.
Step 2
Add garam masala, coriander, cumin, and pepper and cook until fragrant, about 1 min.
Step 3
Add water, tomato paste, sugar, and salt and deglaze pan. Whisk until no lumps of tomato paste remain. Bring mixture to boil, then remove from heat.
Step 4
Stir in heavy cream. Use immersion blender to process until smooth.
Step 5
Add chickpeas and return to simmer over med heat. Cover saucepan, reduce heat to low, and cook, stirring occasionally, 15 min.
Step 6
Remove from heat. Stir in cilantro and remaining 2 Tbsp butter.
