Step 1
To save time, you can cook your chicken ahead of time in a crockpot and shred it and freeze/refrigerate until ready to prepare with this meal.
Step 2
Cook, or steam, your cauliflower in a microwave for 4 minutes, or until soft.
Step 3
Combine the cooked cauliflower with the cheese wedges, salt, 2/3 of the parmesan cheese (1/2 cup for 4 servings), half of the scallions, and 6 tablespoons of water (1½ cups for 4 servings) in a blender; puree until smooth. Set aside and keep warm.
Step 4
Prepare your zucchini noodles, then sauté them in olive oil in a very hot skillet for about 2 minutes.
Step 5
Add the shredded chicken and the cauliflower alfredo sauce.
Step 6
Divide the Zoodles into 4 equal portions, and repeat, dividing the chicken and sauce into 4 equal portions. Use a scale and change the settings to grams to get a more precise measurement. Sprinkle each with one tablespoon parmesan cheese. Garnish with parsley if desired.
