This simple recipe makes perfectly chewy pizza dough. it can be split into 2 16" pies or 3 12"

Instructions
Step 1
Add the flour, yeast, sugar, and salt to a stand mixer bowl.

Step 2
Add the water and gently mix until mostly combined

Step 3
Add olive oil and continue mixing on medium / high for another 10 min

Step 4
The dough should mostly pull free from the bowl. If it's not, add more flour a tbsp at a time. If it's fully separated from the bowl add more water 1 tbsp at a time mixing about 1 min before adding more
Step 5
Cover with a damp towel and let rise for about an hour in a warm place. I put my oven on keep warm for about 5 min while mixing the dough and put it in there to rise
Step 6
Once the dough has more than doubled remove from bowl onto a clean surface.
Step 7
Divide Into 2 or 3 equal portions and let rest for 30min. You can use this time to heat your oven and pizza stone
Step 8
Stretch into 16 or 12 inch pies and top as desired
