1 poundgemelli pasta
or fusilli

2 tablespoonsolive oil

1 poundminced beef
or pork

1 teaspoongarlic powder

1 teaspoonground cumin

½ teaspoonground turmeric

1 tablespoonolive oil
for cooking

1 pintcherry tomatoes
halved

½ cupsun-dried tomatoes
drained and chopped

1bell pepper
red or yellow, diced

⅓ cupkalamata olives
sliced

½ cupmarinated artichoke hearts
drained and chopped

1cucumber
small, diced

¼ cupred onion
finely chopped

⅓ cuptoasted pine nuts

225gfeta cheese crumbled

¼ cupfresh parsley
chopped

2 tablespoonsfresh basil
chopped
For the dressing:

¼ cupextra virgin olive oil

3 tablespoonswhite wine vinegar

1 tablespoonlemon juice

1 teaspoonlemon zest

2cloves garlic
minced

1 teaspoondried oregano

½ teaspoondried basil

1 teaspoondijon mustard

1 teaspoonhoney

salt
to taste

freshly ground black pepper

Instructions
Step 1
Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Drain, rinse briefly with cold water, and set aside in a large bowl. Toss with 2 tablespoons olive oil to prevent sticking.
Step 2
In a large skillet, heat 1 tablespoon olive oil over medium-high heat. Add the minced meat and cook until browned, breaking it into small crumbles as it cooks. Season with garlic powder, cumin, and turmeric. Cook until no longer pink, about 5-7 minutes. Remove from heat and let cool slightly.
Step 3
Prepare the dressing by combining all dressing ingredients in a small bowl or mason jar. Whisk or shake well until thoroughly combined.
Step 4
In the large bowl with the pasta, add the cooked minced meat, cherry tomatoes, sun-dried tomatoes, bell pepper, olives, artichoke hearts, cucumber, red onion, pine nuts, feta cheese, parsley, and basil.
Step 5
Pour the dressing over the pasta mixture and toss gently until all ingredients are well coated. Season with additional salt and pepper to taste.
Step 6
For best flavor, cover and refrigerate for at least 30 minutes (or up to 4 hours) to allow the flavors to meld together.
Step 7
Before serving, toss again, taste, and adjust seasoning if necessary. Garnish with pomegranate seeds and additional crumbled feta if desired.
