Instructions

Step 1
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the halved Brussels sprouts and sliced chayote. Stir-fry for about 5-7 minutes until they begin to soften.
Step 2
Push the vegetables to the side of the skillet and add the remaining tablespoon of olive oil. Add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.
Step 3
Add the shrimp to the skillet. Season with salt, pepper, and soy sauce. Cook for about 3-4 minutes until the shrimp turn pink and are cooked through.
Step 4
Toss everything together to combine and heat through for an additional minute.
Step 5
Serve hot, garnished with fresh cilantro.
