Ingredients
4 servings

1 lblean ground turkey
or beef

4zucchinis
medium, spiralized or cut into noodles

4yellow squash
medium, spiralized or cut into noodles

2 x 15 ozcans crushed tomatoes
no added sugar

1onion
large, diced

4cloves garlic
minced

2 tablespoonsolive oil

2 teaspoonsdried oregano

2 teaspoonsdried basil

salt
to taste

pepper
to taste

Fresh parsley
chopped, for garnish
Instructions
Step 1
Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent.
Step 2
Add the ground turkey or beef to the skillet. Cook until browned and cooked through, breaking it apart with a spoon as it cooks (about 5-7 minutes).
Step 3
Stir in the crushed tomatoes, oregano, basil, salt, and pepper. Let the sauce simmer for about 10-15 minutes to allow the flavors to meld.
Step 4
While the sauce is simmering, heat a separate non-stick skillet over medium heat. Add the zucchini and squash noodles, cooking for about 3-5 minutes until they are just tender but still slightly crisp.
Step 5
To serve, place the zucchini and squash noodles on a plate and top with the meat sauce. Garnish with fresh parsley.
