Ingredients

1.5kgpork belly
cut into large chunks
2 tablespoonsvegetable oil
4 clovesgarlic
minced
2red chillies
finely chopped, adjust to taste
2oranges
Zest and juice of
½ cupsoy sauce
¼ cuppalm sugar
or brown sugar
1 cupchicken stock
2star anise
1cinnamon stick
30mlhoisin sauce
optional, for added depth
Salt
black pepper
freshly ground, to taste
Fresh coriander leaves
for garnish
Instructions
Step 1
1. Prepare the Potjie: Heat the vegetable oil in a potjie pot over medium-high coals.
Step 2
2. Brown the Pork Belly: Add the pork belly pieces to the pot and brown them on all sides until they develop a rich color. Remove the pork and set aside.
Step 3
3. Sauté Aromatics: In the same pot, add the minced garlic and chopped chillies. Sauté for about 1-2 minutes until fragrant.

4. Deglaze the Pot: Pour in the orange juice and use a wooden spoon to scrape up any browned bits from the bottom of the pot.

5. Combine Ingredients: Return the browned pork belly to the pot. Add the soy sauce, palm sugar, chicken stock, orange zest, star anise, cinnamon stick, and hoisin sauce (if using). Stir well to combine all ingredients.

6. Simmer: Cover the pot with its lid and allow the mixture to simmer gently over low heat for about 2.5 to 3 hours. Check occasionally, stirring and ensuring that the liquid level remains sufficient to prevent burning. Add a bit more chicken stock or water if necessary.

7. Adjust Seasoning: After the pork is tender and the flavors have melded, taste the sauce and adjust the seasoning with salt and pepper as needed.

8. Serve: Garnish the dish with fresh coriander leaves and serve hot with steamed rice or crusty bread to soak up the flavorful sauce.
