Instructions
Step 1
Slice beef tripe into small strips, blanch in hot water with a couple slices of ginger, green onion, cooking wine and Szechuan pepper corn for a couple of minutes, remove from the water and drain.
Step 2
Gently smash garlic and ginger, slice scallion and fresh red chili, set aside.
Step 3
Heat up cooking oil in a sauce pan, sear bruised garlic & ginger and sliced red chili in hot oil, add in Pi Xian bean paste and dried chili to mix until fragrant. Then add in pre-cooked beef tripe to cook. Further add in bay leaves, rock candy, dried star anise, Szechuan peppercorn, dark soy sauce and light soy sauce to mix well. Add in 1200 ml cold water bring water to boil, simmer on medium low heat once it starts boiling for 40 minutes until beef tripe turns soft.
Step 4
Remove spices from the stew, finally season the stew with chicken powder. Garnish with sliced scallion, ready to serve.
