Ingredients

2 lbsbeef brisket
cut into 2 inch chunks

1daikon
cut into 2 inch chunks

50gginger
sliced

50ggarlic
minced

1 cupshaoxing wine

3 Tbspsoy sauce

1 TbspDark Soy Sauce

1 Tbspoyster sauce

1.5 Lbeef stock
sub water

40grock sugar

2bay leaf

3star anise

½ tspcloves
whole

2 TbspCorn starch

3 Tbspwater

salt

black pepper

scallion
thinly sliced, for garnish
Instructions
Step 1
In a dutch oven over high heat, sear the beef and season with salt and black pepper. Remove from pot and set aside.




Step 2
Add the sliced ginger, minced garlic, cloves, star anise, bay leaves and cook until fragrant. Deglaze with the shaoxing wine then add the soy sauces, oyster sauce, and bring to a boil.









Step 3
Add the seared beef back into the pot along with the beef stock and rock sugar. Bring the mixture to a boil and simmer covered for 1.5 hours until the beef is fork tender. Add the daikon and cook for another 30 minutes or until the daikon is tender.



Step 4
Make a slurry with the cornstarch mixed with 3 tbsps of water. Add to stew to thicken in. Season the stew to taste with salt and pepper.




Step 5
Serve the stew over rice and garnish with scallions.
