Instructions

Step 1
Preheat the oven to 425 degrees

In a large bowl, combine halved baby potatoes, olive oil, minced garlic, rosemary, thyme, salt, black pepper. Toss until the potatoes are evenly coated

Spread the potatoes in a single layer on a baking sheet lined with parchment paper

Roast in the preheated for about 30 minutes, or until the potatoes are golden brown and tender, stirring halfway through for even cooking.

Remove from the oven and garnish with chopped parsley before serving
