Step 1
1. Prepare Cabbage Steaks: Preheat oven to 425°F. Line a large rimmed baking sheet with foil. Trim stem off cabbage. Slice the cabbage vertically into 4 (1-inch-thick) steaks. Place the steaks on the prepared baking sheet.

2. Brush both sides of the steaks with 2 tablespoons oil. Sprinkle both sides with ½ teaspoon pepper, ½ teaspoon onion powder and 1 teaspoon salt.

3. Roast until tender and browned, about 45 minutes, flipping halfway through.

4. Meanwhile, prepare Herb Butter: Combine 4 tablespoons butter, ½ cup herbs, minced garlic, 1 teaspoon lemon zest, 1 teaspoon lemon juice, 1 teaspoon Worcestershire, ½ teaspoon crushed red pepper and ½ teaspoon salt in a medium bowl. Beat with an electric mixer on medium speed until fully combined, 30 seconds to 1 minute.
