5Russet potatoes
scrubbed clean

1 tablespoonolive oil

1 ouncedry ranch dressing mix
packet, divided GF

4 tablespoonsbutter
softened

8 ouncescream cheese
softened and cubed, divided

1 ¼ cupshredded Colby jack cheese
divided

¼ cupmilk

½ teaspoongarlic powder

½ teaspoonsalt

3 cupschicken breast
cooked, shredded or chopped

⅓ cupcelery
diced

¼ cuphot sauce
such as

ranch dressing
optional toppings

cilantro

green onions

blue cheese crumbles
Instructions
Step 1
Preheat the oven to 400ºF. Prick the potatoes all over with a fork and rub oil over the skins. Place the potatoes on the oven rack and bake for 50-70 minutes, turning every 20 minutes.
Step 2
Cool slightly and slice off the top part of the potato, enough to scrape out almost the entire potato. Use a spoon to scrape out the insides, leaving some of the flesh still on the skins. Transfer the potato filling to a large bowl.
Step 3
To the potatoes add 1 ½ tablespoons ranch dressing mix, butter, 4 ounces softened and cubed cream cheese, ¾ cup cheese, milk, garlic powder, and salt. Use a hand mixer to beat on medium speed just till combined.
Step 4
Transfer the potato skins to a foil-lined baking sheet. Divide the ranch potato stuffing between the skins. Return the potatoes to the oven and bake for 15 minutes, or until hot throughout.
Step 5
While the potatoes are baking, prepare the buffalo chicken topping. First mix together the remaining cream cheese, remaining ranch packet, and hot sauce until smooth. Stir in the cooked chicken and celery.
Step 6
Top the twice baked potatoes with the buffalo chicken. Sprinkle on the remaining cheese and return to the oven for 15 additional minutes, or until the buffalo chicken filling is hot and the cheese is melted. Serve with optional toppings.
