Ingredients

Ice cream

½ cupcocoa powder
sifted

⅓ cupgranulated sugar

¼ cupdark brown sugar
packed

salt

⅔ cupwhole milk

1 ½ cupsheavy cream

1 teaspoonvanilla extract

Instructions
Making the ice cream
Step 1

In a large bowl, whisk together the cocoa, sugars and salt.






Step 2

Add the milk and, using a hand mixer on low speed, beat to combine until the cocoa and sugars are dissolved.


Step 3

Stir in the heavy cream and vanilla.



Step 4

Cover and freeze 1 to 2 hours.

Step 5

Turn on your ice cream maker; pour the mixture into the frozen freezer bowl and let mix until thickened, do step 6 in the meantime, 15- 20 minutes.

Use a double boiler to melt the chocolate chips


Step 7

Five minutes before mixing is completed, gradually add the marshmallow cream, one spoonful at a time. Once mixed, add the crushed graham crackers and melted chocolate, one at a time, through the top and let mix in completely.




Step 8

The ice cream will have a soft, creamy texture. Transfer the ice cream to an airtight container and place in freezer overnight, if a firmer consistency is desired. Remove from freezer about 5 minutes before serving.
