Instructions
Step 1
1. Prepare the dough: use a kitchen scale to measure ingredients. In a large bowl, combine active sourdough starter, warm water, and olive oil. Mix well using a bread whisk or fork until most of the starter is dissolved.

2. Add flour to the mixture, followed by salt. Mix until a shaggy dough forms and there are no more pockets of dry flour.

3. Cover the bowl with a damp kitchen towel and let the dough rest for 30 minutes.

4. Perform a series of stretch-and-folds on the dough. Repeat this step one more time, with 30 minutes of rest in between each set.

5. Cover loosely and allow the dough to double in size, proofing for about 3-4 hours in a warm place, I placed it in the oven with just the light on.

6. Prepare the baking dish: Add 2 tablespoons of olive oil to coat the bottom and sides of the baking dish. Pour the dough into the baking dish. Proof the dough in a warm spot on the counter for approximately 2 hours or until it has filled the dish and risen slightly.

7. Prep rosemary: Chop rosemary leaves.

8. Dimple the dough: After proofing, drizzle the dough with olive oil and sprinkle with flakey salt and rosemary. Using wet fingers, dimple the dough.
Step 9
9. Bake: Bake at 425°F for 30 minutes, until nice and golden brown. Wait atleast 30 minutes to slice.
