Ingredients

4bell peppers
large, halved and deseeded
2 Tbspolive oil
1 lbground turkey
½ cupquinoa
1zucchini
2 cupstomatoes
2garlic clove
2 tspcumin
2 tsppaprika
salt
pepper
Chimichurri sauce
Instructions
Step 1
"Preheat oven to 375°F (190°C). Make quinoa per directions
Step 2
Sauté ground turkey in olive oil over medium heat until mostly cooked.
Step 3
Add zucchini, tomatoes, garlic, and spices. Cook for 5–7 minutes, then stir in cooked quinoa.
Step 4
Place bell pepper halves in a baking dish and fill with the turkey mixture.
Step 5
Cover with foil and bake for 25–30 minutes. Uncover and bake another 5 minutes if desired.
Step 6
Garnish with fresh parsley before serving."
Step 7
Chop the sauce ingredients well, mix, and pour over the baked peppers to serve
