Crispy Parm Onion Chips

These crispy delicious onion chips are easy to make and will leave you wondering why you haven't had these before. They are a low carb addition to a meal as a side, a topping, or a snack. They can be served on a burger or with a dip like horesradish onion sauce. The special ingredient you never knew you needed is Sumac, a burgudy colored spice rich in flavor. It is particularly good on onions and roasted chicken.
If you don't have Sumac, use paprika, or smoked chipotle for a little heat.

Step 1
Preheat oven to 375°F (190°C).
Step 2
Slice onions thin using mandolin or slicer if possible. If you don't have a mandolin, it may be safer to cut the onion in half and then slice with a knife to get nice thin even slices between 1/8 and 1/4 inch.

Step 3
Grate Parmesan cheese directly onto a baking sheet lined with parchment paper, forming an even base layer.
Step 4
Lightly spray with avocado oil.
Step 5
Sprinkle a small amount of garlic powder, salt, and sumac over the cheese.
Step 6
Dot with a few very thin pats of butter, spaced out across the sheet.
Step 7
Add a single layer of thinly sliced onions, touching to fill in gaps as much as possible but not overlapping.
Step 8
Lightly spray the onions with more avocado oil, then season again with salt, garlic powder, and sumac.
Step 9
Grate a thin layer of parm on the onions.
Step 10
Place the tray in the preheated oven and bake for about 20 minutes.
Step 11
Check for doneness—when the onions are golden brown and starting to crisp, remove from the oven.
Step 12
To flip: place a thin, flexible cutting board or another baking sheet lined with parchment on top of the onions. Hold both layers together and quickly invert to flip the onions onto the new parchment.
Step 13
Return to the oven and bake until the second side is also golden and crisp, about 5 to 10 more minutes. Check often.
Step 14
Remove from oven and let cool slightly—they will continue to crisp as they cool. Serve warm as a side, topping, or snack.
Step 15
Sprinkle with a light dusting of Sumac and dig in.
