Chicken Marinade

2 Tbspadobo sauce
from canned chipotle peppers

2chipotle peppers
chopped

3 Tbspolive oil

3garlic cloves
minced

1 Tbspdried oregano

1 tspground cumin

1Juice of lime

Salt

pepper

Vinaigrette

½ cupred wine vinegar

1 TbspDijon mustard

2 Tbsphoney

1 tspadobo sauce
from chipotle can

¼ tspgarlic powder

¾ cupolive oil

Instructions
Marinate the Chicken
Step 1
Blend or stir together adobo sauce, chipotle peppers, olive oil, garlic, oregano, cumin, lime juice, salt, and pepper.
Step 2
Marinate chicken in a sealed container or bag for at least 2 hours, preferably overnight.
Cook the Chicken on the Traeger
Step 3
Preheat Traeger to 225°F using hickory or mesquite pellets.
Step 4
Smoke chicken for 30 minutes.
Step 5
Raise temperature to 375°F and continue cooking for 15–25 minutes, or until internal temperature reaches 165°F.
Step 6
Let rest before slicing or cubing.
Cook the Rice
Step 7
Cook white and brown rice separately according to package instructions.
Step 8
Combine and divide evenly across 5 containers.
Make the Vinaigrette
Step 9
Whisk or blend together vinegar, mustard, honey, adobo sauce, garlic powder, olive oil, salt, and pepper.
Step 10
Store in a small container and refrigerate.
Assemble Bowls

In each of 5 containers:

Layer rice, sliced chicken, shredded cheese, sour cream, and a spoonful of pico de gallo.

Add vinaigrette on the side to drizzle before eating.
