King Charles III Cheesy Baked Eggs
King Charles is a huge fan of eggs and cheese. No wonder this is one of his favorite dishes. It's delicious with warm crusty bread for breakfast, brunch or even dinner and simple to make too.

Ingredients
1 servings

fresh spinach
wilted in a little olive oil

1tomato
heirlooms are good, cut into bite size pieces

2 ozsoft cheese
I use Cornish Brie, but any soft cheese will work

1egg

¼ cupheavy cream

2 ozhard cheese
grated, I like a mix of red Leicester and Montgomery cheddar, but any hard cheese will work

2fresh basil leaves
torn

2 slicesProsciutto
torn, or chopped cooked bacon
Instructions
Step 1
Butter a small ovenproof dish and line with wilted spinach, making a small well in the centre. Place the tomato) on top of the spinach.
Step 2
Arrange the soft cheese around the dish amongst the tomatoes. Add the torn basil leaves and the optional Prosciutto. Season with salt and pepper.
Step 3
Crack the egg into the centre of the spinach.
Step 4
Pour the heavy cream over the egg - avoid breaking the yolk. Sprinkle with grated hard cheese.
Step 5
Place in a hot oven 350F (180C) for 8-10 minutes. Let it stand for a few minutes before eating.
