These Red Velvet cookies are guaranteed to be a hit with guests of all ages. Soft, loaded with flavor, and a beautiful color, it will be almost impossible to resist a second cookie!

Instructions

Step 1
In a large bowl, beat butter and cream cheese together until smooth. Add both sugars and beat until light and fluffy (2–3 min).
Step 2
Mix in egg, buttermilk, vanilla, and red food coloring until fully incorporated.
Step 3
In a separate bowl, whisk flour, cocoa powder, baking soda, and salt. Gradually mix into wet ingredients until just combined.
Step 4
Stir in the white chocolate chips. Chill the dough for 30–60 minutes (helps keep them thick and chewy).
Step 5
Preheat oven to 350°F (175°C). Line a baking sheet with parchment. Scoop 2-tbsp mounds of dough onto the sheet, spacing about 2" apart.
Step 6
Bake for 9–11 minutes — the edges should be set but the centers still soft. Slightly undercooked is better than slightly overcooked!
Step 7
Let cookies cool on the pan for 5 minutes before transferring to a wire rack.
Step 8
While the cookies cool, make the drizzle. Mix all ingredients listed until it's pourable, and drizzle over cooled cookies. (TIP: leave your cream cheese out for at least 1.5 hours; if the center is too cool, your mixture will be lumpy. Also, make sure to start mixing at a low speed. Incorporate liquid slowly and in small increments.)
