Monk Fruit Chocolate Chunks

This recipe is what I make most often as a substitute for chocolate chips. They're sugar free, contain minimal ingredients, and much cheaper than buying sugar free chocolate chips. Just mix together equal parts (by weight) of coconut oil, cocoa powder, and granular sweetener for a dark chocolate bar equivalent to about 70%. This recipe makes 90 g of chocolate, or the equivalent of 1/2 cup chocolate chips when chopped

Instructions
Step 1

In a small bowl, microwave coconut oil for about 1 minute, until melted. Stir in cocoa powder and sweetener with a silicone spatula until smooth
Step 2

Pour the melted chocolate into molds, and refrigerate for 1 hour to harden. Break into large pieces, or chop into smaller chunks
