Ingredients

1 headcabbage
1cucumber
fresh cilantro
⅓ cupavocado oil
0.5rice wine vinegar
1 tablespoonmonk-fruit sweetener
salt
1 cuppeanuts
chicken thighs

This makes about six good size servings. I am going to try it making the dressing with a fourth of a cup of avocado oil to reduce the calories always add the pickled red onion. It definitely adds to the flavor. It’s a little dull without it and the juice from the pickled red onions to bring up the flavor, you could also add things like bean sprouts and snow, peas, and watercress. That would all be good in this delicious salad. Also, I wouldn’t put all the dressing on the salad or I would leave the peanuts out and add them as you toss up the salad. This would be really good in a jar salad too because you could stack it and things wouldn’t get too drenched in the dressing before you could eat it
