2 tablespoonsall-purpose flour

1 ½ cupswhole milk

Instructions
Step 1
Start by heating a skillet over medium heat and cook the sausage, breaking it apart with a spatula. Keep cooking until it’s nicely browned and fully cooked. Once that’s done, sprinkle in some flour and stir it all together to coat the sausage. Let it cook for about a minute. Then, gradually pour in the milk while stirring continuously, so you don’t get any lumps. Let it simmer until it thickens up, which should take about 5 minutes. Don’t forget to season it with salt, pepper, and a pinch of garlic powder if you like! Keep it warm while you do the next steps.
Step 2
In a bowl, whisk together the eggs, a splash of milk, salt, and pepper. In a non-stick skillet, melt some butter over medium heat. Add your egg mixture and cook gently, stirring until they’re just set. Once they’re ready, take them off the heat.
Step 3
Preheat your oven to 375°F (190°C). Get a 9x13-inch baking dish and give it a light greasing. Now, it’s time to fill those tortillas! Place some scrambled eggs, cooked potatoes (if you’re using them), chopped green onions, and a lovely mix of shredded cheeses into each tortilla. Roll them up and place them seam-side down in the dish.
Step 4
Pour that delicious sausage gravy all over the enchiladas. If you’re a cheese lover, sprinkle some extra cheese on top for good measure!

Cover the dish with foil and pop it in the oven for about 15 minutes. After that, take off the foil and bake for another 5–10 minutes, or until everything is heated through and bubbly. Enjoy your tasty creation!

Garnish with extra green onions and serve warm alongside hot sauce or fresh fruit.
