Chicken, Spinach, and Mushroom Bake
Ingredients:
- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach, chopped
- 1 cup mushrooms, sliced
- 1 cup cream of mushroom soup
- 1/2 cup sour cream
- 1 cup mozzarella cheese, shredded
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Directions:
1. Set your oven to preheat at 375°F (190°C).
2. Warm the olive oil in a large skillet over medium heat, then sauté the garlic for 1-2 minutes until it becomes fragrant.
3. Add the mushrooms to the skillet, cooking them for 5-7 minutes until they are tender and their moisture has evaporated.
4. Stir in the chopped spinach and cook for another 2-3 minutes until wilted. Remove from heat and set aside.
5. In a mixing bowl, blend the cream of mushroom soup, sour cream, Italian seasoning, salt, and pepper.
6. Place the chicken breasts in a greased baking dish in a single layer. Spoon the spinach and mushroom mixture evenly over the chicken.
7. Drizzle the soup mixture over the top, ensuring it covers the chicken well. Top with an even layer of mozzarella cheese.
8. Bake in the preheated oven for 25-30 minutes or until the chicken is fully cooked and the cheese is bubbly and golden brown.
