Ingredients

🧄 Dough Ingredients (for one 12–14" crust)

2 ¼ tspactive dry yeast

1 tspsugar

¾ cupwater
warm, about 110°F

2 cupsall-purpose flour

1 tspsalt

1 Tbspolive oil
plus extra for greasing bowl
🧀 Homemade Queso

1 tablespoonbutter

1 tablespoonall-purpose flour

¾ cupwhole milk
or half & half for richer queso

1 cupshredded Cheddar cheese
or Mexican blend

¼ teaspoongarlic powder

¼ teaspoononion powder

1 tablespoonsgreen chilies
diced, or pickled jalapeños, optional, for heat

salt
to taste

hot sauce
Optional, or 1-2 teaspoons salsa for extra flavor
🌮 Filling Ingredients

1 lbground beef
or turkey/chorizo

0.5 PacketTaco Seasoning

2 Tbspwater

½ cupshredded Mexican cheese blend
optional for extra gooeyness

½ cupblack beans
or corn, optional

1flour tortilla
large, 8-10 inch, burrito size

Instructions
Make the Dough
Step 1
In a bowl, combine warm water, yeast, and sugar. Stir and let sit for 5–10 minutes until foamy.
Step 2
Add flour, salt, and olive oil. Stir until a shaggy dough forms.
Step 3
Knead on a floured surface for 5–7 minutes until smooth.
Step 4
Place in a lightly oiled bowl, cover with a towel, and let rise in a warm place for 1 hour, or until doubled in size.
Prepare the Filling
Step 5
In a skillet over medium heat, brown the ground beef. Drain excess fat.

Add taco seasoning and water. Simmer for 2–3 minutes. Set aside.
Make the Queso
Step 7
Make a Roux
In a small saucepan over medium heat, melt the butter. Whisk in the flour and cook for about 1 minute, stirring constantly, to remove the raw flour taste.

Add Milk
Slowly pour in the milk while whisking constantly. Continue to stir until the mixture thickens slightly, about 2–3 minutes.
Step 9
Add Cheese & Flavor
Reduce heat to low. Stir in shredded cheese a handful at a time, whisking until smooth and melted. Add garlic powder, onion powder, and chilies/jalapeños if using.

Adjust
Taste and add salt, hot sauce, or a spoonful of salsa if desired for more kick.

Use Immediately
Spoon queso directly onto your pizza base, use as a dipping sauce, or store in an airtight container for up to 3 days (reheat gently with a splash of milk).
Assemble the Pizza

Preheat oven to 425°F. Grease a large pizza pan, cast iron skillet, or line a baking sheet with parchment.

Roll out your risen dough into a 12–14" round, slightly larger than your pan. Place it in the pan, letting the edges hang over.

Spread queso in the center, leaving a 1.5" border.

Layer in taco meat, black beans/corn, and shredded cheese (if using).

Top with a flour tortilla, pressing it gently over the filling.
Seal & Bake

Fold the overhanging dough up and over the tortilla edges to seal in the filling.

Optional: Brush crust with olive oil and sprinkle with garlic powder or taco seasoning.

Bake for 18–22 minutes, or until golden brown and cooked through.
Finish & Serve

Let the pizza rest for 5 minutes.
