Step 1
Cube your sweet potato and put in the oven or air fryer for roughly 20 minutes
Step 2
Thinly slice the onion and red pepper and fry until golden
Step 3
Add the fajita seasoning and stir until well mixed in
Step 4
Add the chopped tinned tomatoes and simmer until thick in consistency
Step 5
Add only the thick cream from the coconut milk and leaving out any water.
Step 6
Add the tsp of smoked paprika and salt and pepper to taste.
Step 7
Stir in the cubed sweet potato
