Ingredients

Mashed cauli topping

0.5 headcauliflower
cut into florets

½ cmilk
or any milk alternate, I use coconut/almond

2 tbutter

salt

½ ccheese
grated

Instructions
Step 1
Preheat oven to 180°C
Mashed cauli topping
Step 2
Put everything in saucepan and cook on low heat for 35 mins. Prepare mince while cauli is cooking

Step 3
Test cauli is soft and mash

Step 4
Stir through grated cheese until melted

Add olive oil to a fry pan and brown onion slowly.

Add crushed garlic. If pan is getting too brown add a bit of water
Step 7
Add mince and brown, breaking up any pieces

Add carrot and celery

Mix stock cube and miso paste in 1 cup hot water and add to pan
Step 10
Cook until carrots are cooked and water has cooked off a bit (you want to keep it fairly moist to make it 'saucy', so add more water if needed

Add tapioca flour to a few tablespoons of cold water in a jug. Mix with a whisk and then add to mince. This should thicken the sauce

If sauce is good consistently, take off heat, or otherwise cook for slightly longer to cook off extra liquid
Assemble shepherd's pie

Add mince to oven dish
Step 14
Add cauli mash on top
Step 15
Cook for about 20 mins until bubbling and starting to brown on top

Step 16
Serve with a side of silverbeet or other greens
