I tried an amazing apple pie in Lisbon. I asked the chef about the ingredients and she mentioned coconut oil. I could see a fairlz big amount of shredded apple, and there were 3 pecans decorating it. She then added maple syrup and cinnamon when she served me. I tried this recipe and it was great. As I didnt have small cups to make little pies, I used a bigger tray about 30 x 20 cms. and I cut it in smaller squares latter and having lots of apple pie bars, aprox 15 of 6x7cms each

Instructions
Step 1
Preheat oven to 180°C (350°F). Lightly grease or line your baking dish with parchment paper.
Step 2
Whisk together eggs, milk, maple syrup, melted coconut oil, and vanilla (if using) in a large bowl.
Step 3
Add oats, cinnamon, salt, apples, and pecans. Stir well and let sit for 5–10 minutes so oats absorb some liquid.
Step 4
Pour mixture into the prepared baking dish and smooth the top.
Step 5
Bake for 30–35 minutes, or until the center is set and the top is lightly golden.
Step 6
Cool 10–15 minutes before slicing. Serve warm or at room temperature.
