Instructions

Step 1
Heat oil in a heavy stockpot.
Step 2
Add chopped vegetables and peas.
Step 3
Cover and cook over medium heat for 4-5 minutes, stirring occasionally.
Step 4
Add broth, stir, and bring to a boil.
Step 5
Reduce to medium.

Prepare dumplings

Step 6
Mix flour, baking powder, and salt in a medium bowl.
Step 7
Add soy milk and oil.
Step 8
Combine to make a batter, not too dry not too moist and thick. If it's too dry, add a bit more soy milk.

Cook dumplings

Step 9
Once vegetables are tender, stir in nutritional yeast.
Step 10
Take a cup of the vegetables and a 1/2 cup of broth, blend in a blender, then add back to a pot and stir.
Step 11
Bring heat up to a slow boil, then lower heat.
Step 12
Drop dough by large tablespoons into pot.
Step 13
Cover and heat for 10 minutes.
Step 14
Uncover and heat for an additional ten minutes.
Step 15
Sprinkle with pepper and serve with chopped parsley!
