Daween yap Danqit yogurt and Barley stew

This yogurt stew is one of my favorites, it’s hearty healthy and so delicious. It has barley, chickpeas, mint, garlic and yogurt.

Instructions

Step 1
1. Rinse the barley put it in a pot add 5 cups of water and boil for 30 minutes.
Step 2
2. In a blender or use a hand blender and mix together 2 cups of yogurt, 1 egg and 4 cups warm water and blend until smooth.

3. Next pour the yogurt mixture over the cooked barley. Add in the drained chickpeas, chicken bouillon and salt.
Step 4
4. Mix and keep stirring continuously until the soup comes to a full boil (its key to keep stirring until the soup comes to a full boil so the yogurt doesn’t separate). Once it comes to a full rolling boil you can stop straining and leave it to boil for about 10 minutes next start make the sautéed garlic and mint.
Step 5
5. In a saucepan sauté the garlic and dried mint in olive oil for 2 minutes. Add this to the yogurt stew and garnish with it too and enjoy.
