250gmushrooms

1onion

200gbacon cubes

1chicken
cut into pieces

2 glassesred wine

2 Tbsptomato puree

2 Tbspflour

1lchicken stock

butter

Step 1
Dice the carrots and chop the onions.
Cooking
Step 2
Take a wide pot and put it on the stove. Season the chicken pieces with salt and pepper. Melt a little butter and arrange the chicken pieces on the bottom of the pot. Brown on both sides (4 to 5 minutes on both sides).



Step 3
Add the sliced onion, together with the mushrooms, carrots and bacon cubes. Cook until the onions are translucent.




Step 4
Sprinkle everything with flour. Make sure that the chicken is covered with flour on all sides. When the flour has formed a thick paste, add 2 tablespoons of tomato puree. Then, pour the stock (and cognac) over the whole thing and make sure the chicken is well covered. Add 2 glasses of red wine.





Step 5
Bring the whole thing to the boil and let it simmer for three quarters of an hour to an hour without a lid. If there is still some fat left floating on top of the liquid in the pot, add a little cornstarch. Season to your liking with thyme, salt and pepper.
