Step 1
Take a wide pot and put it on the stove. Season the chicken pieces with salt and pepper. Melt a little butter and arrange the chicken pieces on the bottom of the pot. Brown on both sides (4 to 5 minutes on both sides).


Step 2
Add the sliced onion, together with the mushrooms and bacon cubes.
Sprinkle everything with flour. Add 2 tablespoons of tomato puree. Pour the stock and cognac over the whole thing and make sure the chicken is well covered. Add 2 glasses of red wine.




Step 3
Bring the whole thing to the boil and let it simmer for three quarters of an hour to an hour without a lid. If there is still some fat left in the pot, add a little cornstarch.
