Step 2
Turkey breast – 145 to 151 °F for 3.5 to 5 hours
Step 3
Chicken thigh – 148 to 165 °F for 2 to 4 hours
Step 4
Pork tenderloin – 140 to 150 °F for 1.5 to 3 hours
Step 5
Steak –130 to 140 °F for 1.5 to 3 hours
Step 6
Delicate fish – 120 to 130 °F for 20 to 30 minutes
Step 7
Firm fish – 125 to 130 °F for 30 to 45 minutes

Step 8
Set for Sous. I’d Evans sear your proteins in cast iron. If fish, broil it.
