Ingredients
1 servings
3–4 gelatin sheets (or equivalent powder amount, about 10 g)
150–200 g fresh or pureed fruit (e.g., peaches, berries, mango)
1–2 scoops collagen powder (5–10 g)
1–2 tablespoons lemon juice (optional, for a little tang)
250 ml coconut milk or Greek yogurt (plain or lightly sweetened)
Instructions
Step 1
Soften gelatin sheets in cold water for 5–10 minutes.
Step 2
Warm about 100 ml of coconut milk or yogurt gently (do not boil).
Step 3
Remove gelatin sheets from water, squeeze out excess, and dissolve them into the warm milk/yogurt, stirring well.
Step 4
Gently fold in the fresh or pureed fruit.
Step 5
Pour the mixture into molds or bowls.
Step 6
Chill in the fridge for at least 4 hours until set.
Step 7
Tips:
Step 8
1. Don’t boil gelatin or collagen: Heat the coconut milk or yogurt gently—too much heat can break down gelatin and collagen, preventing the jello from setting properly.
Step 9
2. Use full-fat coconut milk or thick Greek yogurt: This helps the jello set with a nice creamy texture and better mouthfeel.
Step 10
3. Puree the fruit for smoother texture: If you don’t want chunks, blend the fruit before folding it in. Or use small soft berries like raspberries or strawberries whole.
Step 11
4. Adjust sweetness to your taste: Start with a little sweetener and add more if needed. Some fruits like mango or peaches are naturally sweet.
Step 12
5. Add lemon juice last: A little acidity brightens the flavor, but too much lemon can weaken gelatin’s setting power, so keep it moderate.
Step 13
6. Chill for at least 4 hours or overnight: The longer it chills, the firmer and tastier it gets.
Step 14
7. Use silicone molds or small bowls: Makes it easier to unmold and serve, especially if you want cute shapes.
Step 15
8. Try toppings for extra fun: A sprinkle of toasted coconut, crushed nuts, or fresh mint leaves on top after setting adds flavor and texture.
