Instructions

Step 1
1. Combine ingredients for curry paste in a small bowl.
Step 2
2. Heat 1-2 T vegetable oil in a wide pan over medium-high. Add curry paste and stir/fry for 3 minutes or so.
Step 3
3. Add diced chicken, stir to coat in the paste. Then add 1/2 C water. Stir to combine, cover, and cook on medium-low for about 8 minutes, or until chicken is cooked through.
Step 4
4. When cooked, add chopped coriander and chilies.
