Instructions
Step 1
Boil the pasta in well-salted water for 2–3 minutes less than the package says.
Step 2
Shred the sage and slice the chicken into strips.
Step 3
Fry the chicken in butter until lightly seared. Add the sage and briefly fry it as well.
Step 4
Pour in the marsala wine and let it reduce by half.
Step 5
Add the chicken stock and cream. Let simmer for a few minutes.
Step 6
Add the partially cooked pasta along with a splash of pasta water. Let cook together for 2–3 minutes.
Step 7
Stir and shake the pan to combine everything.
Step 8
When the sauce has thickened slightly, stir in a bit of parmesan and serve.
