Instructions

For the chicken

Step 1
Follow these instructions in parallel with the pasta instructions (from pasta -step 2). Season 2 chicken breasts with salt and pepper to taste. Heat 1 tablespoon of olive oil in a pan over medium-high heat, then add the chicken breasts and cook for about 6-7 minutes on each side. Check that the chicken is fully cooked by cutting into the center of the thickest part and ensuring that there is no pink meat left. Remove the chicken from the pan and let it rest for a few minutes before slicing or serving it whole.

For the pasta

Step 2
Cook the pasta (al dente) in salted boiling water.
Step 3
Cook the garlic in the sun-dried tomato oil until fragrant. Then add the chopped onion and cook for 3 more mins.
Step 4
Add the red bell pepper (diced) and cook for 3 mins, then add the cream and chicken broth. Let it simmer and stir occasionally until it starts to thicken.
Step 5
Add the spices, sun-dried tomatoes, parmesan and spinach. Then stir until it's well incorporated and spinach has melted. Reserve some of the sauce for serving. You can then add the pasta and pasta water.
Step 6
Finally, add the chicken and top with sauce. It's ready, bon appétit !
