Step 1
Heat the oven to 400 degrees.
Step 2
Season fish generously with salt and let rest at room temperature while you prepare the sauce.
Step 3
In a medium saucepan over low heat, melt 1 tbsp butter and add the shallots and garlic. Sauté for 2 minutes, stirring often.
Step 4
Add the wine, vinegar, thyme, cinnamon, honey, blueberries and a pinch of salt. Bring to a boil then reduce heat and simmer uncovered, stirring occasionally, until the liquid has reduced and is mostly evaporated (about 15-20 minutes), creating a sauce of jam-like consistency but still pourable. Stir in the remaining 2 tbsp of butter.
Step 5
Bake salmon until cooked to desired level of doneness, approximately 12-14 minutes. Cooking time will vary with the thickness of the salmon.
Step 6
To serve, plate the salmon and spoon berry sauce over the top.
