Instructions

Step 1
In a large microwave-safe bowl, microwave the chocolate in 30-second increments until fully melted; be careful not to burn it. Mix in vanilla bean paste and salt.
Step 2
In a medium bowl with an electric mixer, whip up egg whites until soft peaks form. Add in the sweetener and continue whipping until stiff peaks form; this should take roughly 4 minutes.
Step 3
Mix egg yolks one by one into the chocolate mixture. If the mixture seizes or hardens, simply mix in warm water one tablespoon at a time until the mixture becomes glossy again.
Step 4
Gently fold in the egg whites with a spatula, and pour into your serving dishes.
Step 5
Refrigerate for at least three hours and up to three days before serving.
Step 6
Spoon, serve, and enjoy!
Step 7
Note If you aren't on a sugar-free diet, feel free to use dark chocolate instead of 100% cacao, as 100% can be hard to find sometimes. You can also use sugar as your preferred sweetener; just use 1/4 cup instead of 1/3 cup.
