Instructions
Step 1
Pop everything except the extra coconut into a food processor or blender and blend until smooth, scraping the sides once or twice. (You may need 1 tbsp of water to help things along depending on how dry your raspberries are. You can also blend the oats finer if needed.)
Step 2
Add the extra coconut to a bowl. Form balls using approx. 2 heaped tsp of the mixture, roll in the coconut, and shape/coating again in your hands.
Step 3
Store in the fridge for up to 5 days, or freeze for up to 2 months. Ideal for snack bowls or on-the-go snacks.
